Wisconsin Field to Fork: Author Lori Fredrich in conversation with Chef Dan Jacobs of Dandan & EsterEv and Centgraf Farms

Join OnMilwaukee Dining Editor and cookbook author Lori Fredrich for an intimate conversation with “Top Chef” runner up Chef Dan Jacobs of Dandan and EsterEv and Lynn Centgraf of Centgraf Farms.  During the conversation, guests will get a peek behind the scenes of a celebrity chef’s work as well as learn the story of a family farm that’s been serving the Milwaukee community for nearly 100 years. Guests will also get to enjoy samples of a dish made by Chef Jacobs with produce from Centgraf Farms.

Chef Dan Jacobs is head chef and co-owner at EsterEv, a globally inspired tasting menu concept, and DanDan, a modern Chinese-American concept with Midwest sensibility. The same year they opened DanDan & EsterEv, Jacobs was diagnosed with Kennedy’s Disease, a genetic neuromuscular condition commonly mistaken for ALS. It’s a disease that makes simple tasks like walking up stairs and chopping onions feel like a massive undertaking. But he is proud to continue working, running two standout restaurants and raising money for the Kennedy’s Disease Foundation. Chef Jacobs is a tireless advocate for the restaurant industry and an avid supporter of local farms.

Alongside business partner Chef Dan Van Rite the two have been honored as James Beard semifinalists for Best Chef Midwest FIVE TIMES and nominated for Best Chef Midwest in 2024.  This summer – as you might know – Chef Jacobs also brought home the honors of being runner up on Season 21 of “Top Chef.”

Located in Mayville, Wisconsin, Centgraf Farms is a family-operated produce farm that dates back to 1926. Their history – which includes multiple swerves, moves and pivots – is a testament to the dedication, hard work and tenacity of farmers across the country. Popular at farmers markets as well as among local chefs, Centgraf is known for producing some of the best heirloom vegetables in Southeastern Wisconsin.
